Produced by applying acid to cellulose fibre, Carboxymethyl Cellulose or CMC as it is known is used in the food industry as an emulsifier, thickener and stabiliser. CMC is widely used in the baking and confectionery industries to evenly disperse oils and fats in doughs and candies. When added to ready to roll fondant it changes the structure and drying properties and turns it into gum paste for use in decorative pieces and flower work.

Usage: Depending on application and required results, starting at 3gm per Kg/L
