Description
Select Mussels from the Galician coast in Spain are processed and slowly fried with an escabeche sauce just like authentic Spanish tapas. The frying process is carried out with meticulous temperature control so that the mussels remain intact before being tinned.
The escabeche sauce is made with paprika, vinegar, oil, garlic and bay leaf to give the mussels a spicy, aromatic and slightly acidic flavour.
