Methylcellulose is made from cellulose pulp derived from plants' cell walls. Our Methylcellulose f50 is the perfect emulsifier, thickener and suspension agent and can be used to substitute gluten in bread making, to stabilise foams or to simply make hot ice cream.
Mix into cold or hot liquid and allow to hydrate for a minimum if 1 hour before using. Usage: For foams 1% Methylcellulose F50 and 0.5% Xanthan Gum, using hand blender mix for 2-4 mins until stable foam forms. For hot ice cream 3-4%, add to ice cream base and chill for a minimum of 7 hours, poach scoop fulls in boiling water till set.
