Is a naturally occurring salt used in the food industry as an acidity regulator and preservative. Sodium citrate can be used in the straight method of spherification to neutralise a low ph. When used with fats it acts as an emulsifier. Use sodium citrate in melted cheese to create a better mouth feel without
the greasy after taste.
Usage: Spherification - 2-4gm/L in Base with highly acidic solutions such as raspberries and citrus fruits.
