Sun-dried and brined in salt before being left to dry until rock hard, Dried Persian Limes (Loomi) are small, dark, and intensely aromatic. Ranging in colour from light tan to deep brown-black, they’re an essential ingredient in Persian and Middle Eastern cuisine. Known by many names—dried limes, black limes, or black lemons—they have a bright citrusy aroma and a sour, slightly bitter flavour that adds depth and balance to rich, spiced dishes.

Loomi is commonly used in slow-cooked stews such as Ghormeh Sabzi and Gheimeh, or added to fish soups to lift and lighten the flavours. Pierce the skin or crack the lime to release its essence as it simmers, or tuck a whole one into a pot of rice for a fragrant citrus infusion.

Grind loomi into a powder to sprinkle over roasted vegetables, grilled fish, or yoghurt-based sauces for a zesty kick. It’s also wonderful in drinks—steep a dried lime in hot water with honey and mint for a refreshing citrus tea, or drop a crushed loomi into your favourite gin cocktail for a unique twist.
