Is a gelatinous substance derived from red algae and is loved by cooks for its amazing setting strength and holding capabilities. Agar sets as a firm brittle gel. Replace 20% of required agar agar with Locust Bean Gum to create a flexible gel. Agar agar sets at 40c and can be remelted if required. Suitable for a Ph range of 2.5-10.
Usage: Gelling - 2-4gm/L to set, 6-10gm/L firm set. Mix into cold liquid and bring to 85c to activate before setting. Also known as E406. 100% from plant sources, suitable for vegans and gluten free.
