Fresh chillies grown on the northern coast of New South Wales are fermented with onion, garlic and salt for 2 weeks to create a complex flavour and increase the sweetness of the onion and garlic before being blended with vinegar and tomato to produce a full-bodied and well rounded hot sauce. Suitable for fancy soirees or just your cup of soup!
