Pasilla chiles are the dried version of red Chilaca chiles. Dried pasilla chiles are black in colour with a thin-fleshed wrinkled skin. They have a pungent and tangy chocolate and raisin flavour with woody undertones and a mild to medium heat. Use them in all your traditional preparations like salsa’s, nacho's, sauces and marinades.
They can be used dried as a seasoning and spice or rehydrate them in warm water for 15mins to make a chile paste, be aware that soaking them longer than 20 minutes can lead them to become bitter. Try dry toasting them to increase their intensity and flavour!
